What is dulce de leche?
Dulce de leche which means “sweet milk” is from Latin America, and is a sweet confection. Make this at home by boiling milk with sugar and a bit of bakingsoda for caramelization, until it reaches a thick texture with a nutty color. Use this for all types of baking, from filling cookies, cakes, ice cream, flan, and more.
Homemade dulce de leche
Method 1:
Making dulce de leche at home is very straightforward. Begin by combining milk and sugar in a saucepan. Add a small amount of bakingsoda, which helps with the caramelization process. Bring it to a boil. Then reduce the heat and let it simmer, until it has thickened, gotten a velvety texture and is caramilized. The process can take a bit of time around 1.5 hours but it is well worth it! To add an extra layer of flavour, you can incorporate additional ingredients such as vanilla extract or your favorite liquours.
Method 2:
This method is even easier and is made by just taking condensed sweet milk and pouring it in an oven form. Put the form in an oven plate and fill with water, until it is halfway of the form the milk is in. Bake for about 45 minutes and have a look to make sure the water is still on a good level throughout the baking.

Ingredients
5 dl Whipping Cream
300ml Dulce de Leche
Sea Salt (optional)
Method
- Whip the heavy cream until lightly and creamy.
- Incorporate with a whisk the dulce lecche completly with the whipped cream.
- Transfer to a freeze stable container and sprinkle with fleur de sel or flaky sea salt.
- Place the container in the freezer for about 3 – 4 hours, pending on the freezer.
Serving suggestions: Plain or with fresh strawberries and a cracker for the perfect summer feeling.
