What is Buchteln?
Buchteln is a classic oven-baked yeast dough from Austria, that has a sweet filling in the middle. Traditionally, people prepare these rolls by making dough in a pan, filling them with fruity jam (like peach or apricot) or fruits, and then serving them with vanilla sauce.
Nowadays, people fill them with various things such as chocolate and poppyseed paste, to name a few. My first try of this dessert was at my Oma’s house in Austria as a child and fell in love with it directly.
How to make variations!
You can make variation of this pull-apart dessert by changing the filling. Some suggestions are:
Custard: A vanilla custard is perfect for this fluffy sweet bread.
Jam Variations: Experiment with different homemade jams by using different fruits such as strawberries, blueberries or blackberries and many more.
The Recipe:
Servings: 16 buchteln
Preparation time: 1.5 hours (with yeast time)
Cooking time: 25-35 minutes
The Ingredients:
2.4 dl Milk, lukewarm
5g Dry Yeast
40g Sugar
1 Egg
77g Butter, room temperature
1/2 tbsp Vanilla Extract
1/4 tsp Salt
325g AP Flour
Apricot Jam (or another choosen jam)
Method:
- In a bowl combine the yeast and milk until the yeast is dissolved. Add some flour. Put aside at room temperature and allow for the yeast to activate and double in size (Tips! You can put the oven on for 30 degrees with only the lamp on).
- Mix sugar, egg, butter, vanilla, and salt with the yeast mixture.
- Stir in the flour and knead the dough by hand or with a machine until a silky smooth dough is formed.
- Make small balls in the desired size. Flatten it out and put a little bit of jam inside then close it. Brush with butter and put in an already buttered oven form.
- Put it aside and let rise for about an hour. Preheat the oven to 190 degrees.
- Put the form in the oven until golden brown for about 25 minutes.
- Let the buchteln cool for a few minutes before enjoying it with vanilla sauce.
