We are so excited to share with you a new recipe, that we experimented with over the weekend: Rose Cookies. Baking with rosehip is a new thing for us. Before we have only made garnitures and syrups from the flowers but never used them in baking until we stumbled across this recipe.
To recreate these cookies, you will need dried rose petals and some rose syrup or water. If you are feeling adventurous, you can make your rose syrup using a recipe, previously shared (linked here). Otherwise, you can easily buy these ingredients if you find yourself short on time or simply cannot find roses in your area – you can buy it on Amazon. The cookie itself is like a classic shortbread cookie, suited perfectly with a relaxing teatime or a cozy coffee break with friends. The best part? They are extremely simple to make and require no advanced baking skills – they are very beginner-friendly.
The Recipe
Prep time: 15 minutes
Cooking time: approx. 15 minutes
Servings: 21 cookies medium-sized
Rose Cookies
2.3 dl unsalted Butter, room temperature
1.57 dl Powdered Sugar
3 teaspoons Rose Water
1 large Egg Yolk
¼ teaspoon Vanilla Extract
5.3 dl AP Flour
¼ teaspoon salt
113 grams White Chocolate, chopped, or 1.7 dl Chocolate Chips
2 teaspoons Dried Rose Petals crushed (optional)
White Chocolate Topping
113 grams White Chocolate, melted
Dried Rose Petals (optional)
Instructions
- Put on the oven for 180 degrees.
- Blend flour and salt and set aside.
- Mix the butter with the sugar with an electric mixer or with a fork, whatever you can use, until it is somewhat fluffy. Add in the rose water or syrup, vanilla, and egg yolk.
- Add the dry ingredients and incorporate well. Chop the chocolate and blend them in with the crushed rose petals.
- Take out a piece from the dough and roll it into a ball, gently press it down until it forms a circular cookie shape and continue with the rest of the dough.
- Bake in the oven for approximately 15 minutes or until the corners have gotten a golden-brown color.
- Take them out and let them cool down.
White Chocolate Topping
- Once the cookies are baked, melt the white chocolate.
- Drizzle the melted chocolate over the cookies or dip half of them in it, then sprinkle some crushed rose petals on top.
