All You Need To Know About Bolognese
Spaghetti Bolognese is originally from Italy and is traditionally made with taglitelle (A broader and flatter type of pasta) rather than the commonly used spaghetti. Traditionally the sauce is ragu alla bolognese which is different from the type of bolognese sauce therest of the world is used to making. Ragu alla Bolognese is a more meaty and less saucy dish made with a combination of ground beef and pork. The sauce is slow cooked with carrots, onions,celery, white wine and a small amount of tomato paste. It is more about enhancing the flavor of the meat than having the focus of the tomato base.
In this recipe we will have a combination of the traditional one and the one that are mostly common to make. It is not a traditional Italian recipe but one we have made for years and absolutely loves. It has a rich flavor from the meat which is paired with the seasoning and the wine – An absolute delight. Pair this with burrate and basil and you will fall in love.
It is prefered to cook the bolognese in a higher pan because it allows for even cooking and thorough mixing of the ingredients as they simmer. The taller sides of the pan help to contain the sauce, reduces the risks of splatters and making it easier to stir without spilling. Additionally, the extra height provides more surface area for the sauce to reduce and thicken properly, allowing the flavors to meld together over the long, slow cooking process that is essential for a rich and authentic ragù alla bolognese.

We love to make bolognese because even though we have one recipe we mostly make (this one), it is always fun and interesting to make it different. Bolognese is a sauce you can really modify to your own preferences and taste, increase the spicyness, sweetness or reduce the sauce and have more meat. It is really up to you how you want to make it. Many families, have their own recipie of a bolognese that travels through generations.
The Recipe
Servings: 4
Preperation time: 15 minutes
Cooking time: 30-40 minutes
The Ingredients
400g Minced Meat
200g Salsiccia Sausage
400ml Tomato Sauce or 2tbsp Tomato Paste
50 ml Milk
400ml Water
1 Carrot (cut small)
1 Onion (cut small)
White Wine
Broth
Salt
Pepper
Herbs
4 Burratas
Fresh Basil
500g Tagliatelle or Spaghetti (dry weight)
Method
- Take the salsiccia and take out the meat from the sausage.
- Saute the minced meat until it gets brown, then add the salsiccia meat.
- Add the vegetables and saute them together for about 5 minutes.
- Add the water, broth, tomato paste (or tomato sauce), milk, herbs and spices. Finally add the white wine. Stir together and let cook on medium to low heat for about 35 minutes or until the liquid has evaporated (decreased) about 85%.
- Before the bolognese is ready, boil the tagliatelle (or your chosen pasta).
- Plate together with the burrata and some basil on top and you are ready to enjoy!
